Autumn is here! It's that wonderful time of year when the weather is cool, the leaves change and you can eat pumpkin everything! Since our Salt Lake yoga community seems to really love pumpkin treats, here is an easy, healthy, pumpkin-y recipe for you.

INGREDIENTS

1 cup almond flour

1 tablespoon coconut flour

1 egg

1 tsp grass fed butter

¼ cup 100% pumpkin purée

2 tablespoons maple syrup

1 tablespoon sugar

½ tsp vanilla

¼ tsp salt

¼ tsp baking soda

1 tsp cinnamon

1 tsp pumpkin pie spice

¼ cup dark chocolate chips

DIRECTIONS

Preheat oven to 350 degrees.

In a small bowl combine egg, butter, maple syrup, sugar, vanilla and pumpkin purée.

In a separate bowl mix together almond flour, coconut flour, salt, baking soda,spice and cinnamon. Add wet ingredients to dry, mix until well combined, fold in dark chocolate chips. Bake for 15 minutes.
