This week’s fresh food find is the humble beet. These purple powerhouses are chock full of antioxidants and folate, and studies have found that they can even lower blood pressure. Even better, beets are surprisingly sweet and make for some delicious fresh Scholé style meal ideas. Here’s a few to try this week:

Blueberry to Beet Smoothie

½ cup frozen blueberries

½ cup frozen beets (chop fresh beets and freeze)

1 cup spinach

1 tsp Chia Seeds

Vanilla Protein Powder

Almond Milk

Add all ingredients to a high powered blender or food processor, BLEND!

Roasted Beet Salad

3 beets, roasted and chopped (wrap the beets in foil and roast for 1 hour at 425F. Allow to cool and then the skins will peel off easily – try a mix of red and golden for color variety)

1 large orange, peeled, segmented and cut into pieces

4 cups baby spinach

1 tbsp olive oil

1 tbsp

Salt & pepper to taste

Option: Add toasted nuts like pistachios, pepitas (shelled pumpkin seeds) and/or feta cheese crumbles

Mix olive oil, vinegar, salt and pepper in a small bowl. Mix beets, orange segments and spinach in another bowl, toss with dressing and sprinkle with nuts and feta on top to serve.

Brazilian Black Beans and Beets

2 beets, roasted and chopped (see above)

1 can black beans, rinsed very well

1 avocado, sliced and chopped

1 lime

1 TBSP olive oil

1 clove chopped garlic

Dash salt

2 tbsp chopped fresh cilantro

Option: Add grated cheddar or feta crumbles

Mix beets, beans and avocado. In a separate bowl, mix lime, garlic, oil and salt to create a dressing. Mix the dressing with the beets and beans, then sprinkle with cilantro and/or cheeses on top. Enjoy as a salad, over rice, or warm it a little and spoon it onto corn tortillas for a delicious cultural infusion.
