As Autumn is upon us and the weather is cooling, off it is a great time to sub those easy salads for easy soups. One of my favorite soups can be changed to suit any dietary preferences. It is hard to go wrong with this seven-ingredient soup!


4 cups chicken or veggie broth

2 cans fire roasted tomatoes

1 lb Italian sausage

2 cups spinach

Parmesan cheese

½ cup small pasta (shells, macaroni, egg noodle, or gluten free noodles)

Pinch of red pepper flakes*


Pre cook the sausage on a skillet. Boil broth and add tomatoes. Add sausage, or sub for veggies like frozen peas or shredded carrots. Add pasta and cook for directed amount of time. Once the pasta is cooked add spinach and red pepper flakes. Top with Parmesan cheese. Serve hot.

*for spicier soup, use hot Italian sausage and more pepper flakes, for less spicy, use mild sausage and minimal pepper flakes.
