The New Year can bring exciting changes and often the changes many of us implement have to do with food. Maybe we try a new diet, experiment with a cleanse or cut out the sugar and treats. Here is a grain free (gluten free), vegan option, chocolate muffin. Seriously, I said chocolate! So when you have the urge to have something sweet and chocolatey, these will do the trick and not throw you off whatever you’ve started this January.

½ cup coconut flour

¼ cup tapioca flour

1 tsp baking soda

½ tsp salt

¼ cup cocoa powder

4 eggs or egg replacement (flaxseed or chia also works to make this vegan, combine 1 tablespoon ground flax or chia seeds to 3 tablespoons water)

½ cup organic coconut oil, melted

½ cup organic maple syrup (or erythritol non-sugar sweetener)

2 tsp vanilla extract

½ cup dark chocolate chips, or even your favorite dark chocolate bar cut into small pieces

Heat oven to 375F. Mix ingredients together then spoon into lined muffin pan. Bake for about 15 minutes or until a toothpick inserted into them comes out clean. Makes about 12 muffins depending on how much you fill each liner.
